Marc says he does this because gluten-free diners are so common nowadays, but anyone looking for a healthy free kick can think again. “The cakes are still indulgent – I use lots of cream and butter!” he says. Gateaux also offers fresh pastries and coffee and has also introduced a cooked breakfast.

Who’s buying?

Ninety-five per cent of customers are regulars, with some coming almost every day. “Once they taste our stuff, they don’t go anywhere else,” Marc says.
